Le Château Quincarnon est une propriété familiale située à Fargues, au cœur du Sauternais, à seulement quelques kilomètres du Château d’Yquem. L’histoire du lieu remonte au XVIIᵉ siècle : l’ancienne métairie fut construite par le Marquis de Quincarnon, avant que les vignes qui entourent aujourd’hui la propriété ne soient plantées dans les années 1950.
L’aventure viticole moderne commence avec Carlos Aseretto, originaire du Pérou, qui arrive en France en 1981. Avec son épouse Catherine, il hérite de Quincarnon en 1982 et développe progressivement la propriété. Le domaine compte aujourd’hui environ 13 hectares et leurs enfants, Mathilde et Gabriel, ont rejoint l’exploitation en 2021 afin d’assurer la continuité familiale.
Le vignoble est implanté sur plusieurs types de sols, notamment des terrains argilo-sableux et argilo-limoneux. Cette diversité permet de rechercher à la fois richesse, fraîcheur et complexité. Le domaine accorde une grande importance au travail manuel de la vigne et adapte les interventions au cycle végétatif de chaque parcelle.
Pour le Sauternes, les vendanges sont effectuées manuellement par tries sélectives. Les vendangeurs sélectionnent progressivement les raisins suffisamment mûrs et touchés par la pourriture noble, afin d’obtenir la concentration et la complexité caractéristiques de l’appellation. Le vin est ensuite élevé en cuve, dans une volonté assumée de préserver fraîcheur et légèreté plutôt que de rechercher une puissance excessive.
Le Château Quincarnon revendique un style de Sauternes moderne et accessible, basé sur un équilibre entre douceur, fraîcheur et tension. Le 2024 s’inscrit dans cette philosophie, avec une sucrosité modérée et une expression aromatique dominée par les agrumes, les fleurs blanches et des notes de vanille.

Château Quincarnon is a family-owned estate located in Fargues, in the heart of Sauternes, just a few kilometres from Château d’Yquem. The history of the property dates back to the 17th century, when the original farm was built by the Marquis de Quincarnon. The vineyards surrounding the estate today were planted in the 1950s.
The modern history of the estate began with Carlos Aseretto, originally from Peru, who moved to France in 1981. He and his wife Catherine inherited Quincarnon in 1982 and gradually developed the estate. The property now covers around 13 hectares, with their children Mathilde and Gabriel joining the family business in 2021.
The vineyard is planted on several different soil types, including clay-sandy and clay-silty soils. This diversity contributes to both richness and freshness. Vineyard work is largely manual and adapted to the vegetative cycle of each individual plot.
For the Sauternes, harvesting is carried out manually through selective picking passes. Grapes affected by noble rot are picked progressively according to their maturity, allowing the estate to achieve the concentration and aromatic complexity typical of Sauternes. The wine is then aged in tank, preserving freshness and lightness rather than relying heavily on oak.
Château Quincarnon aims for a modern and approachable style of Sauternes, built around a balance between sweetness, freshness and tension. The 2024 follows this philosophy, with moderate sweetness and an aromatic profile marked by citrus, white flowers and subtle vanilla.
